Winemaking Criteria

• Expectation of good maturity at the beginning of October 2017 and delicate harvests with the harvesting machine with an on-board sorting table for the greatest respect for the grapes.
• Total destemming of the grapes and adaptation of maceration conditions throughout the year (temperature control between 23 and 28 ° C, gentle extraction by mixing with compressed air and 1 shedding ...)
• At the end of the malolactic fermentation, repeated aeration and racking to enhance all the assets (color, aromatic complexity, structural structure)
• In spring, barrels are aged for 12 months in barrels of different ages (from 1 to 5 wines) with careful ventilation before bottling in early 2019.

A Sensory Experience

The color is dense, deep garnet in color with a rim with slight evolving nuances.

The nose is powerful with predominantly red and black fruits, a hint of leather and undergrowth then a hint of its aging in barrels with woody - vanilla nuances.

The palate is round, smooth on the attack with a small network of tannins on the finish.

Wine and Food Matching

Served at a 15 to 17°C temperature (59 to 62.6°F), and after a one-hour decantation, our Anjou Rouge "Cuvée Tradition" will perfectly match:

  • Delicatessen (Rillauds d’Anjou, “Rillettes” (potter mince), smoked ham…)
  • Fleshy river fish, with some red wine reduction butter sauce
  • “Pot au feu” or veal’s head,
  • Cold or fried “boudin noir” (blood sausage), or some grilled pork,
  • Beef tartar or Carpaccio,
  • Soft cheeses: “Reblochon”, “Brie”, “Farm Camembert”…

This wine should be tasted over the next two years.
