Winemaking Criteria

A patient waiting period was observed in order to get the over-ripeness of Chenin Blanc grapes, followed by a manual harvest through successive sortings, as the noble rot was progressively coming. Respect of the harvest, elimination of bruised stalks, slow and delicate pressing. Slow natural fermentation in oak barrels over several weeks. Aged in oak barrels during 12 months and then assembled before bottling.

A Sensory Experience

The deep yellow robe shows golden hues. The nose is sweet and fresh at the same time. First come aromas of candied white fruit (quince, apricot) with an exotic touch (pineapple, mango), combined with notes of honey and dried fruit due to noble rot. You can also smell the elegant and delicate oak barrel elevage aromas. In mouth, the attack is perfectly balanced: dense, smooth, and "gourmand" much like the little girl whose name inspired this vintage. Finally come the rich aroma complexity dominated by pineapple, quince and honey.

Wine and Food Matching

Tasted at a 5 to 6°C temperature, after a possible few hours aeration, our Chaume Agatha is ideal for aperitive and can also match many dishes: half-cooked or pan-fried foie gras, blue cheese, pies with apricots and almond paste.
