Winemaking Criteria

  • Patient waiting period to get yellow and very ripe grapes on 10th October.
  • Pre-fermentation adaptation depending on vintages (respect for the harvest, pre-fermentation maceration, long and soft pressing, 2 meticulous settling...)
  • Controlled fermentation in new oak barrels (yeasting, controlled temperatures : 17 to 19°C (62,6 to 66,2°F) but also in old barrels and a little part in tank
Long aging in an oak barrel followed by blending in February 2019, in order to get the best expression of the Chenin.

A Sensory Experience

The golden yellow robe is deep, with delicate amber hues.

The nose develops aromas step by step: aromas of comfit Chenin (cooked quince and apricot, honey, lime tree), followed by hints of orange, wood and vanilla brought by oak barrel fermentation, perfectly well managed. The final delivers aromas of caramel sauce, due to a partial malo-lactic fermentation.

The mouth is generous and smooth, with a touch of sweetness. Here come the aroma complexity of white and yellow fruits, spices, honey…A hint of alcohol and acidity reveals a very beautiful final, perfect for food matching.

Wine and Food Matching

Its aromatic taste and its perfect balance allows you to create numerous matching. Think about:
  • Duck and Goose “foie gras”
  • Fishes with their creamy reduction sauce
  • White meats (Veal, poultry, rabbit) with creamy sauce
  • Cooked scallops with its creamy reduction sauce of Coteaux du Layon
  • Cooked seafood and tarts, any many other ideas
This wine, very pleasant already, will favorably evolve over 10 years minimum
