Winemaking Criteria

We wait for a reasonable ripeness of Chardonnay until harvesting, in order to bind the whole aromatic complexity with the freshness of the cuvée. The harvest occurred on September 28th and October 6th 2016. We adapt pre-fermentation process depending on vintages (respect for the harvest, pre-fermentation maceration, long pressing, meticulous settling)

Fermentation is controlled (yeasting, controlled temperature: 16°C (60.8°F)). We don't have any malolactic fermentation. Elevegae is short. Bottling occurred on spring 2017 in order to keep the freshness of its aromas.

A Sensory Experience

The golden yellow robe is wonderful with its great intensity. The nose exudes the aromas of the Burgundy grape such as fresh white fruits: pear, apple, peach... and the freshness of white flowers such as acacia. The mouth is nicely well-balanced, smooth and delicate. This is a really charming Loire Valley Chardonnay.

Wine and Food Matching

Served at a 5 to 6°C temperature (41 – 42.8°F), this dry white wine will perfectly match:

  • Flavors of the sea: selfish (langoustines / scampi), uncooked shells (oysters, clams…) and cooked (mussels in white wine, cockles…)
  • Vegetal flavors: leek tart, asparagus…
  • Smoky flavors: smoked fish (trout, salmon, halibut, shark…)
  • Garlic flavors: snails or frogs’ legs with their garlic butter…
  • Fatty fish : trout, mackerel, Loire Valley fried fish

Our Chardonnay is at its best young. Don’t wait for tasting it.
