Winemaking Criteria

• Exceptional maturity of the grape variety chardonnay. Harvest on the 2 plots of the castle on September  the 18th, 2019. The plots selected for the base wines were harvested earlier, and the plot of the Soucherie was chosen later with riper grapes with finer skins for this IGP Loire Valley wine.
• Adaptations of the pre-fermentation phases according to the vintage (respect of the harvest, long pressing, meticulous settling...)
• controlled fermentation (yeast, temperature regulation at 16°C...) no malolactic fermentation
• Fairly short maturing,  and bottling in April 2020 to keep the maximum of freshness  and aromatic taste.

A Sensory Experience

This Chardonnay has a light yellow color with delicate greenish tinges, sign of a beautiful freshness.
It has a very expressive and fresh nose for a chardonnay, almost explosive.
We first perceive the aromas of pear and peaches, then a beautiful mineral expression of the schist soil settles before a floral freshness of acacia.
The first sensation in the mouth is freshness then very quickly a nice roundness settles.
In the end an impression of very fine bubbles of carbon dioxide saved from alcoholic fermentation, brings great freshness.

Wine and Food Matching

Served at a 5 to 6°C temperature (41 – 42.8°F), this dry white wine will perfectly match:

  • Flavors of the sea: selfish (langoustines / scampi), uncooked shells (oysters, clams…) and cooked (mussels in white wine, cockles…)
  • Vegetables tarts: leek tart, asparagus…
  • Smoky flavors: smoked fish (trout, salmon, halibut, shark…)
  • Garlic flavors: snails or frogs’ legs with their garlic butter…
  • Fatty fish : trout, mackerel, Loire Valley fried fish

Our Chardonnay is at its best young. Don’t wait for tasting it.
