Winemaking Criteria

- After a rigorous control of the sanitary state, a systematic tasting of the grapes regularly over 2 weeks before the manual harvest was done in 2 sorting on September 24/ 2019, for a very small part then on October the 3rd to keep only the very ripe yellow grapes (14% vol).
- In the wine-cellar the pressing was delicate and long followed by careful settling and a long stay on fine lees at controlled temperatures of 10 - 13 ° C to keep the structure and aromas.
- Alcoholic fermentation in vats over a very large part and a small part in 400l barrels, after yeasting and rigorous monitoring of temperatures between 16 and 17 ° C.
- Aging in vats for 87% and 13% in oak barrels (on the lees) over several months, to enhance the aromatic complexity, until bottling in June 2020.

A Sensory Experience

The color is luminous, yellow, with green reflections, a sign of the great freshness characteristic of our Loire grape varieties...
The nose releases predominantly citrus fruit aromas, green apples and above all a superb expression of white flowers: lime blossom, with a hint of honeysuckle, and a mineral touch of "hot" schist.
The attack on the palate is lively, tonic and fresh with a straight, slender finish that will allow many pairings with fish, crustaceans and shellfish ... a very nice, refreshing wine.

Wine and Food Matching

Served at a temperature of 10 - 12 ° c, this dry white wine will go well with:

- Cooked shellfish (cockles, clams, mussels, etc.)
- Crustaceans (langoustines, lobsters or lobsters, grilled or in sauce)
- grilled fish in creamy sauces,
- Fish tartars, smoked fish

This wine will favorably evolve over the next 10 years, but is already enjoyable!
