Winemaking Criteria

- Conscientious work in the vineyard: pruning adapted to the AOC, grassing between rows.
- Delicate harvest for the greatest respect for the grapes, very good this year with a wonderful spring and a sunny summer on September 30, 2019 with good maturity.
- Total destemming of the grapes, then sorting on the table and adaptations of the vinification to the year 20-day maceration with temperature control between 23 and 27 ° C, and part in thermovinification to obtain a "crunchy" wine
-At the end of Malolactic fermentation, at the beginning of December, when racking, the wine is oxygenated with gentleness and little sulfur added to keep the aromatic complexity. This will be adjusted reasonably before bottling.
- Tangential filtration, then bottling in April 2020


A Sensory Experience

From the outset, the wine... amazes by its power and richness but above all by its luminosity and its color: garnet with purple reflections.
From the service, the nose expresses itself on notes of red and black fruits, then with aeration in the glass, the complexity expands on notes of spices and cooked fruits – caramelized.
The attack on the palate is round and velvety with a beautiful elegance ... we find all the aromatic richness dominated by red fruits and spring flowers. The tannins are already well enveloped, which will allow serene aging in the bottles for the coming months.


Wine and Food Matching

Served at a very slightly cool temperature of 13 - 16 ° c, this wine will accompany simply and with greed:

• Numerous cold cuts (Rillauds of Anjou, rillettes, smoked hams, etc.).
• Firm-fleshed fish with a red wine reduction sauce
• Cold or pan-fried black pudding, grilled pork.
• Generous red meats (ribs of beef, grilled tournedos, pot au feu) roast lamb ...
• Soft cheeses (reblochon, brie, farmhouse camembert, etc.).
