A Sensory Experience
The yellow color is gorgeous, gold with bright, shiny, sparkling…and glowing undertones!
The nose is also of great "crystalline purity" and a beautiful smoothness with aromas of almost stewed ripe yellow fruits (apricots, vine peaches and quince jelly...). The finely woody nuances revealed by the fermentation in barrels reinforce this olfactory expression.
The palate pursues this delicacy with great smoothness, reinforced by aromas of spices, honey and sweet vanilla. A touch of tannins brought by the oak strengthens its character and energizes its majestic schist terroir on the hillside of Bouchemaine.
Wine and Food Matching
After a carafe, its aromatic complexity and its taste balance will allow it to be enjoyed as an aperitif but also for many combinations with dishes:
- Smoked and raw fish
- Fish or noble shellfish (lobster, langoustine, etc.) accompanied by a creamy reduction sauce
- Many white meats (veal, poultry, rabbit) with cream sauces, Pan-fried or half-cooked foie gras
- Truffled white sausage…
- Hard cheeses (Comté aged 24 or 36 months, old mimolette, etc.)
Storing:This already very pleasant wine will evolve favorably over a minimum of 10 years.
